A Quick Refreshing Recipe for Calicut Street Style Egg Scramble With Peas and Coconut- Egg Bhurji

Ingrdients

  1. Egg                             = 3 no:
  2. fresh peas                  = 10 gm
  3. chopped onion          = 20 gm
  4. chopped ginger         = 3 gm
  5. chopped green chilly = 2 gm
  6. diced tomato             = 10 gm
  7. curry leaf                    = 1 gm
  8. salt                             = to taste
  9. pepper powder        = 1 gm
  10. coconut oil                = 5 ml
  11. mustard seed           = 1 gm
  12. grated coconut         = 10 gm

How to achieve

  • Heat oil in a thick bottom wok style pan
  • add mustard seed, curry leaf when starts cracking
  • add ginger,garlic then onion saute together
  • when its light;y golden in color add peas and  beaten egg scramble to semi dry yet juicy
  • add fresh grated coconut and tomato
  • season with freshly ground pepper and salt
