Three Textures of Strawberry Using Textura Products Avante_garde Cooking

we here used Elbulli -Produced Textura products to perform some excellent results of modern culinary adventures. There may be difference in thought of using edible chemicals in favor of attaining impossible textures through normal cooking , but we found it curious enough to try out you will also enjoy this advanced cooking techniques.

The products we use here are calcic – calcium chloride in a form for usage in commercial kitchen Algin – sodium alginate treated for the use of cooking.


The products can be interchanged in use calcic solution instead of algin and mix with algin in strawberry puree instead of calcic try and taste which one is better fit for your requirement.
