What is an Induction Cooking

An induction stove, magnetic energy inside the coils of the stove top generate electromagnetic fields that initiate a warming reaction with the substance of the steel-based cooking vessel. This, in turn, causes the cooking vessel to heat. The coil does not heat up during this process. However, because all of the energy is transmitted to the base of the cooking vessel only, the cooking vessel actually cooks the food, not the stove. Additionally, because there has to be stimulation between the metal of the vessel and the coil, once the vessel is removed, the process is broken.

Cons to look for,

Requires specialist cooking utensils with a high ferrous content, which may be more expensive. Availability of parts and servicing of induction cookers should be considered. Check warranties, servicing and parts availability with your supplier before purchase. Potentially inadequate power supply for induction cookers may be an issue in some commercial kitchens.
Commercial hobs start at 2.2kW per hob and can go up to 16kW per hob, so for example a twin 3kW hob would need a 20amp electrical supply.

Make sure your supply can meet the demand of induction equipment. No flame, therefore some limitations in cooking such as no charring of food. Induction suites by Swiss company Menu Systems were fitted in London’s Lanesborough hotel kitchens three years ago and executive chef Paul Gayler has no regrets. “I was doubtful about the idea of induction at first because I like a gas stove, but we got used to it very quickly,” he says. “One of the nicest things is having a cool kitchen and the units are easy to keep clean with a little soapy water and a scourer.Since the induction suite was installed, Gayler says, energy savings have amounted to roughly £600 a month.

As well as rising gas prices, the requirement to fit an expensive gas interlock between gas equipment and ventilation canopies is another reason why kitchens are keen to look at alternatives.

Gayler says chefs need to “take everything into consideration” when thinking about the cost of induction kitchens. “While induction is not a cheap piece of equipment it is worth the money,” he argues. “You’ve also got to look at it as having a happier team working in an environment where they are not physically tired out by heat.” “The base of the pan must be magnetic – place a simple fridge magnet against it to check.”
