Modern Indian Cuisine – Appam and Lamb Curry

We use appam, a traditional breakfast dish made with fermented rice batter and cooked like a pancake. There is also a variation called egg appam in Kerala, where a fresh egg is dropped into the centre while the appam is cooking. We keep the same concept but serve the fried egg separately.

Slow-Braised Lamb Curry with Appam

Appam is well accompanied by lamb curry. Here, we use slow-braised lamb belly cooked in the traditional Indian way for eight hours at a temperature of 60°C, resulting in a butter-like texture of lamb.

The combination of appam, spiced lamb curry, carrot and cumin purée, fried egg and vegetable crisps brings together traditional Indian flavours with modern Indian cuisine presentation.
