‘Beyond Curry’ — Indian cuisine has much more to offer than curries and tandoors.Kerala, the southern state of India, is advertised by state tourism as God’s Own Country for its natural beauty. When considering international recognition for Indian cuisine, I feel Kerala has not yet received its deserved place.As a chef, I am proud to represent my homeland. In this book, the basic recipes from my mother are preserved as close as possible to their original form, even when they are presented in a more luxurious way.This book is written more like a chef’s learning diary than a normal cookbook. All the recipes have been tested and tried in my home kitchen.Through the book, we discuss much more than Kerala cuisine recipes. We also look at food designing, plating concepts, the restaurant business and more.

Sometimes even contrasting elements, when combined correctly, can result in an excellent food presentation.You will notice different presentation styles throughout the book and how you can maximise your cooking skills and the ingredients being used. Sometimes you need to play with contrasting colours, particularly when presenting complex dishes with more than three main ingredients.We learned that cooking is the art and science of good eating. It can also be defined as the study of food and culture, with a particular focus on gourmet cuisine.One who is well versed in gastronomy is called a gastronome, while a gastronomist is one who unites theory and practice in the study of gastronomy.However, on many occasions, chefs who challenge the laid-down path have succeeded in creating a name for themselves.

Many food presentations are closely related to people’s culture and their eating habits. Even religion can have a great influence on how food is cooked and presented.In Indian cuisine, cultural influence on food is very strong, and as Indians, we have to preserve our culinary heritage.Being modern in our cooking and presentation skills does not mean copying the West. It means presenting our food to global standards while still keeping its authenticity.

Once you have decided to work for yourself, it is a great and bold decision you have made for your life. Stick to it.I would suggest that it is better to have a service-industry background before starting a restaurant business. If you are only a promoter, that is fine when you have an expert team to take care of your business.

Kerala cuisine is still an unexplored area of Indian cuisine. Its possibilities are unlimited, and it can be very cost-effective when it comes to producing fantastic dishes.Kerala dishes are generally simple and lean compared with some of the richer cuisines of India. This is mainly due to the coastal influence on Kerala cuisine.Kerala also has a fantastic legacy of seafood recipes, which can be an added advantage for Indian restaurants.Kerala cuisine has to be marketed properly to bring in clients because it offers a different taste compared with the more familiar Indian restaurant cuisine.
There has to be a strong plan and decision before you take your first step. Once you have made your decision, never look back. Whatever hardship it may take, make your plan a reality.
