This bubble waffle dosa is a modern take on the traditional South Indian dosa. Fermented rice and urad dal batter is mixed with edible charcoal to create a striking black dosa, then filled with a spicy mixture of mature cheddar cheese, green chilli, onion and coriander.

The recipe can be prepared in a bubble waffle maker for a unique presentation or cooked traditionally on a dosa tawa. The result is a crisp, savoury chilli cheese charcoal dosa with a soft, cheesy centre.

Directions

Prepare the Filling

Add the cheddar cheese, chopped green chilli, onion and coriander leaves to a bowl. Mix well and keep aside.
Pour the fermented dosa batter into a separate bowl. Add the edible charcoal powder and mix thoroughly until the batter becomes evenly black.

Stage 3

Lightly coat the bubble waffle maker with clarified butter or ghee. Pour the charcoal dosa batter evenly into the waffle maker.
Place a little of the chilli cheese mixture inside each bubble pocket. Drizzle a little more dosa batter over the filling to cover it. Close the bubble waffle maker and cook for about 3 minutes, or until the dosa is cooked and crisp.

Traditional Dosa Tawa Method

If you do not have a bubble waffle maker, heat a dosa tawa and lightly grease it with ghee. Pour the charcoal dosa batter and spread it into a thin circle.
Add the chilli cheese mixture over the dosa and drizzle a little ghee or oil around the edges. Cook until crisp and easy to release from the pan. Roll the dosa gently and leave it on the pan briefly for extra crispness before serving
