| 1cup Foxtail millet / Kangni / Varagu buy fresh | |
| 2.5cups Water | |
| 1 medium size onion; finely chopped | |
| 1 small tomato; chopped | |
| 1/2cup Mixed veggies (Beans, Carrots and Peas); finely chopped | |
| 2-4Nos Green Chillies; chopped | |
| Few Coriander leaves; chopped | |
| 1tsp Lemon juice | |
| Salt as required | |
| 2-3tbsp Grated coconut | 
For Dressing
| 1tbsp Coconut Oil | |
| 1/2tsp Mustard seeds | |
| 1tsp Split Black gram/ Urad dal | |
| 1/2tsp Bengal Gram/ Chana Dal | |
| A pinch Turmeric powder | |
| Few Curry Leaves |

					Stage 1
Rinse the foxtail millet and soak in water for 10-15 minutes. Drain water and keep aside.
Take a pan, add oil and heat. Add chana dal, urad dal and mustard seeds. Fry till they turn golden brown.
										Once the mustard splutters, add curry leaves, onion and green chillies.
Sauté for a minute and add chopped tomatoes.

			Stage 2
Add finely chopped mixed veggies, salt, turmeric and sauté for 2 more minutes.
Add water and once it starts to boil, add foxtail millet. Mix well.
										Cover and cook for about 10 minutes on low flame.
Once foxtail millet is cooked, add coriander leaves, lemon juice and coconut.
Serve hot.
