Crab Pasta Recipe | Gluten-Free Fusilli with Smoked Oysters & Cavolo Nero
This crab pasta recipe combines gluten-free fusilli with crab meat, smoked oysters, Cavolo Nero, garlic, onion, tomato and chilli flakes for a rich and flavourful seafood pasta.
The smoked oyster oil is used to sauté the aromatics, adding extra depth to the sauce, while Cavolo Nero brings freshness and texture. This gluten free pasta recipe is quick enough for an everyday meal but has enough character to work as a special seafood pasta recipe too.

| 120g crab meat, drained and shredded | |
| 80g smoked oysters in oil | |
| 80g Cavolo Nero / black kale, washed and roughly chopped | |
| 50g onion, finely chopped | |
| 8g garlic, finely chopped | |
| 100g tomato, chopped | |
| 2g chilli flakes | |
| 15ml extra virgin olive oil | |
| 10ml oil from the smoked oysters | |
| 1g crushed black pepper | |
| Salt, as needed | |
| 30 ml white wine, optional |

Directions

Cook the pasta
Cook the gluten-free fusilli according to the packet instructions until al dente. Cook for an additional 1–2 minutes if you prefer a softer texture for this gluten free pasta recipe.

Start the seafood sauce
Heat a deep sauté pan and add a little extra virgin olive oil along with some oil from the smoked oysters.Add the chilli flakes while the oil is hot to help release their flavour.
Add the chopped garlic and sauté gently until lightly golden. Add the onion and cook for approximately 2 minutes until softened.
Stir in the chopped tomato and cook until it begins to break down.

Add the Cavolo Nero
Add the washed and drained Cavolo Nero. Cook briefly so the leaves soften while retaining their dark green colour and texture.
This gives the seafood pasta recipe a fresh vegetable element without overcooking the greens.

Add crab and smoked oysters
Add the smoked oysters along with a little of their oil, followed by the drained crab meat.
Season with crushed black pepper and check the salt before adding more, as the seafood may already contain salt.
Optional white wine
If using white wine, add a small splash and cook over high heat briefly until the alcohol aroma reduces.

Combine with pasta
Add the cooked fusilli to the pan and toss everything together until the pasta is evenly coated with the seafood mixture.
