How to Make Chicken Thoran With Gizzard (Peshani)

If you are exploring traditional poultry recipes, you have to try this classic from Kerala. Chicken Thoran is already a beloved side dish in many non-vegetarian feasts across South India. But today, we are taking it a step further by using the gizzard, known as Murgh ki Peshani in Hindi.

For those unfamiliar, the gizzard is the muscular stomach of the bird. Once cooked down, this specific cut of chicken meat develops a fantastic, slightly chewy texture—much like lamb or beef tongue—and absorbs flavors beautifully. This makes it an incredibly satisfying base for our dish.

While many meals you can make with chicken focus on standard cuts like the breast or thighs, utilizing offal like the gizzard brings authentic, rustic flavors to your kitchen. Plus, this is a surprisingly easy to make chicken dish. In our adaptation of the traditional Kerala style, we clean, cut, and marinate the gizzard with rich spices, pressure cook it until tender, and then finish it off in a pan with freshly grated coconut.

500gm Chicken (cut into small pieces) boneless
300gm Onions sliced
20gm Garlic chopped
20gm Ginger chopped
4gm Green chillies chopped
2Tspn Chicken masala powder
1Tspn Pepper crushed
1Tspn Cumin seeds
100gms Coconut grated
As Needed Curry leaves
20gms Coriander leaves
As Needed Salt
As Needed Oil
5gms Mustard seeds
10gms Urad Dal

Directions

Marinate the Chicken Gizzard

Clean the chicken gizzards thoroughly and cut them into small pieces. Place them in a bowl and season with turmeric powder, coriander powder, chilli powder and salt. Mix until all the gizzard pieces are evenly coated.
Transfer the marinated chicken gizzards to a pressure cooker. Add a small quantity of water and cook over medium heat for approximately 10 minutes, or until tender. Allow the pressure to release naturally. If excess liquid remains, simmer until it reduces to a thick, concentrated sauce.

Prepare the Tempering

Heat coconut oil in a wide pan. Add mustard seeds and allow them to splutter. Add dried red chillies, sliced ginger and chopped garlic. Sauté for about a minute until fragrant.
Add sliced onion or shallots and fresh curry leaves. Cook until the onion softens and becomes translucent. Add turmeric powder and coriander powder and sauté carefully so the spices do not burn. Finish with crushed black pepper.

Add the Gizzards

Add the cooked chicken gizzards together with any reduced cooking liquid. Mix thoroughly and cook over low heat until the mixture becomes semi-dry and the spices coat the meat.
Add the freshly grated coconut. Mix for 1–2 minutes so the coconut combines with the chicken and spices without becoming overly dry. Finish with coriander leaves and adjust the seasoning. Serve hot with rice and curry.
