Magnolia Bakery-Inspired Banana Pudding Recipe | Creamy Homemade Dessert

This banana pudding recipe is inspired by the famous Magnolia Bakery-style dessert. Ripe bananas, homemade vanilla custard, fluffy whipped cream and pieces of soft Swiss roll are gently folded together and chilled until creamy and light.

Finished with extra Swiss roll, mixed berries and grated chocolate, this homemade banana pudding makes an indulgent yet easy dessert for family gatherings, celebrations or dinner parties.

3 Ripe bananas
As required Milk for soaking bananas
1 cup Swiss roll, cut into pieces
100 g Whipped cream powder
Vanilla Custard
3 tbsp Sugar
1 tbsp Corn flour
2 Egg yolks
1 tbsp Vanilla essence
½ cup Milk
As required Swiss roll pieces
As required Mixed berries
As required Chocolate, grated

Directions

Prepare the Bananas

Slice the ripe bananas and soak them briefly in milk. Reserve the banana-infused milk for preparing the whipped cream

Make the Whipped Cream

Place the whipped cream powder in a mixing bowl. Gradually add the banana-soaked milk and mix.
Using a hand blender or electric whisk, beat until the cream becomes light and fluffy and holds its shape. The whipped cream is ready when it remains in the bowl when gently tilted.

Prepare the Custard

Add sugar, corn flour, egg yolks, vanilla essence and milk to a saucepan. Whisk thoroughly until smooth and free from lumps. Place the saucepan over low heat. Cook while stirring continuously to prevent the custard from sticking to the bottom. Continue until it becomes thick and creamy. Remove from the heat and allow it to cool completely
Place the cooled custard in a large bowl. Add about 2 tablespoons of whipped cream and gently fold it into the custard. Add the remaining whipped cream. Fold gently rather than stirring vigorously so that the mixture retains as much air and volume as possible.The pudding mixture should become light and mousse-like.

Add Bananas & Garnish

Add the soaked banana pieces and gently fold them through the cream and custard mixture. Add the Swiss roll pieces and carefully fold until evenly distributed. Avoid overmixing.
Transfer the banana pudding into a large serving bowl. Cover and refrigerate for at least 6 hours to allow the pudding to set and the flavours to develop. Spoon the chilled pudding into individual dessert bowls. Top with Swiss roll pieces, mixed berries and freshly grated chocolate. Serve chilled.
