Directions
1.
Step 1
Crack the eggs into a mixing bowl and whisk until the yolks and whites are completely combined.Add the sugar and a small pinch of salt. Whisk again until evenly mixed.
This gives the sweet crepe recipe a lightly sweet flavour without making the batter too heavy.
Pour in the melted butter or clarified butter and mix well.
The butter helps keep the crepes soft and also assists with cooking.

Step 2
Gradually add the all-purpose flour while whisking continuously.
Mix until the flour is incorporated and there are no visible lumps.
Slowly pour in the milk while whisking.
The batter for this French crepe recipe should be thin and pourable, closer to a light soup consistency than a traditional pancake batter.

Step 3
Allow the batter to rest for approximately 10–15 minutes.
This helps the flour hydrate and gives the crepes a smoother texture.
Heat a flat crepe pan or non-stick frying pan over medium-low heat.
The pan should be warm but not excessively hot, otherwise the batter may set too quickly and become thick.

Step 4
Pour a small amount of batter into the centre of the pan.
Immediately tilt and rotate the pan so the batter spreads into a very thin layer.
Cook until the surface begins to look dry and the edges start lifting away from the pan.
Gently lift the edge and flip the crepe.
Cook the second side briefly. Since the crepe is very thin, it only needs a short cooking time.
Repeat with the remaining batter.
