This masala chai recipe is a comforting and aromatic Indian masala tea recipe made by simmering milk with cardamom, cloves, fresh ginger and tea. Lightly crushing the spices before adding them helps release their aroma and gives the chai its characteristic warming flavour.

This traditional masala tea recipe can be adjusted depending on how strong or sweet you like your tea. Fresh ginger and cardamom create a fragrant ginger cardamom tea, while cloves add extra depth. Black pepper or dry ginger can also be added for a stronger spiced Indian tea.

Heat the milk and water

Add milk and water to a saucepan and bring them gradually to a gentle boil. This forms the base of the masala chai recipe.
Roughly crush the cardamom, cloves and fresh ginger together. There is no need to make a fine paste; lightly crushing the spices helps release their flavour into the Indian masala tea recipe.

Infuse the spices

Once the milk begins to bubble, add the crushed ginger, cardamom and cloves. Stir well, reduce the heat and allow the spices to infuse.
