This colourful fruit chaat recipe combines ripe seasonal fruits with chaat masala, lemon juice, nigella seeds, honey yogurt, tamarind chutney and crunchy sev. Fresh apricot, kiwi, plum, Alphonso mango and pomegranate create a refreshing mix of sweet, tart and juicy flavours.

The fruit is lightly tossed with lemon juice and chaat masala to create the characteristic tangy flavour of an Indian fruit chaat. Nigella seeds add a subtle earthy note, while thick Greek yogurt mixed with honey provides a creamy contrast.

Prepare the fruits

Wash all the fruits gently in cold water. Choose ripe but firm fruits so they hold their shape when plated.
Peel the kiwi and mango. Slice the kiwi into neat pieces and cut the apricot, plum and mango into attractive bite-sized portions. For this summer fruit chaat, try to keep the fruit pieces consistent in size for a refined presentation. Remove the pomegranate seeds and keep them separately in a bowl. They will be used at the end to add colour, freshness and texture to the Indian fruit chaat.

Season the fruit

Place the prepared fruits in a mixing bowl. Add lemon juice and chaat masala, then toss gently so the fruit is lightly coated without becoming crushed. Sprinkle in the nigella seeds.
