Leftover Braised Duck & Fried Egg Breakfast Sandwich Recipe

This leftover duck recipe is a simple way to transform yesterday’s cooked duck into a satisfying breakfast. Flaked braised duck is reheated and layered with fresh tomato, a soft fried egg and toasted bread to create an easy breakfast sandwich recipe with very little preparation.

The egg is cooked over-easy so the yolk stays soft, while the bread is toasted in the same pan for extra flavour and fewer dishes. Because the cooked duck is already well seasoned, the sandwich needs very little additional seasoning.

This is also a useful no-waste idea for using leftovers. The same method can be adapted with leftover chicken, lamb or other cooked meats. Served without mayonnaise, it makes a straightforward option for easy breakfast recipes, quick and easy recipes and an occasional hearty breakfast.

Directions

Prepare the Leftover Duck

Remove the cooked meat from the duck leg and shred or flake it into bite-sized pieces. If the duck has been refrigerated, keep it ready for reheating later.
Wash the tomato and cut it into even slices. Keep the tomato, bread and flaked duck ready so the breakfast sandwich recipe can be assembled while everything is warm

Prepare the Egg fry

Heat a non-stick pan over medium heat and add a little vegetable oil. Break one egg into a small bowl first, then gently slide it into the hot pan. This helps the egg retain a neat shape. Season lightly with salt and black pepper.
Cook until the egg white has set. Carefully turn the egg and cook the second side very briefly. The yolk should remain soft in the centre. Transfer to a plate and repeat with the second egg. This soft-centred egg gives the fried egg sandwich a rich texture without requiring extra sauce.

Toast the Bread

Using the same pan, toast the bread slices until lightly golden on both sides. You can toast them in the remaining cooking oil or add a little butter or vegetable spread for extra flavour.
Add the flaked leftover duck to the same pan. Heat for approximately 2–3 minutes, stirring occasionally, until piping hot throughout. The cooked duck should already contain seasoning, so taste before adding additional salt.

Place one toasted bread slice on a serving board or plate.Arrange tomato slices evenly over the bread. Spoon a generous layer of warm flaked duck over the tomato.
