Indian Masala Omelette Recipe | Easy Folded Omelette
This masala omelette recipe is a simple Indian-style folded omelette made with eggs, finely chopped onion, green chilli, curry leaves, ginger, garlic and tomato. The vegetables and aromatics are sautéed briefly before the seasoned eggs are added and gently folded into a soft omelette.

Directions

Prepare the Ingredients
Finely chop the onion, green chilli, curry leaves, ginger, garlic and tomato. If using spinach, wash and roughly chop it.
Crack the eggs into a bowl and beat them well using a fork or whisk.
Season with salt while beating so the seasoning is evenly distributed throughout the masala omelette recipe.

Heat the Pan
Place a non-stick frying pan over medium-high heat.
Add the sunflower oil and allow the pan to become hot.
Add the chopped onion, green chilli, curry leaves, ginger and garlic.
Sauté briefly until softened but avoid allowing the ingredients to become heavily browned.

Add the Tomato and eggs
Add the finely chopped tomato.
Cook until some of its moisture evaporates so the omelette does not become watery.
Add the optional spinach at this stage and cook briefly until just wilted.
Pour the beaten eggs over the cooked vegetables.
Gently stir through the centre as the eggs begin to set.

Cook Evenly
Using a spatula, gently pull the cooked edges towards the centre and allow the uncooked egg to flow into the empty spaces.
Continue until the omelette is mostly set but still slightly soft inside.
Move the pan so the handle faces away from you.
Slide a spatula underneath one side of the omelette and carefully fold it towards the centre.
Fold the opposite side over to create the classic folded shape.

Turn the omelette carefully and cook briefly on the other side.
