100g fresh mint leaves, picked and roughly chopped
100g fresh coriander leaves, chopped
1 green chilli
5g fresh ginger, peeled and sliced
7g fresh garlic, peeled and sliced
Juice of 1 lemon
3g black salt
2–3 ice cubes
½ tsp chaat masala, optional
Additional salt, if required

Prepare the herbs

Wash the mint and coriander thoroughly and drain well. Pick the mint leaves from the tougher stems and roughly chop both herbs. Fresh herbs are essential for giving this mint coriander chutney its bright colour and refreshing flavour.
Peel and slice the ginger and garlic. Cut the green chilli into smaller pieces so it blends evenly.

Place the mint, coriander, green chilli, ginger and garlic into a mixer or blender. Add the lemon juice and black salt.
